Day 38 : Basic Indian Gravy – White Gravy

White gravy or Shahi gravy is another important gravy in Indian cooking. Shahi meaning Royal is a rich and creamy gravy. The addition of cashew nuts gives it a unique flavour. While making this gravy, it is necessary to keep the spiciness level loved by your family in mind as this curry can get a little sweeter. Increase the amount of chilies as per your taste.

3 big onions
15 cashew nuts
2 tbsp melon seeds
2 green chilies
1 tbsp ginger garlic paste
1 tsp white pepper powder
Salt to taste
2 tbsp cream
2 green cardamoms
2 cloves
1 inch cinnamon stick
1 bay leaf

Boil onions and make a paste with green chilies. Keep aside.
Make a paste of boiled cashew nuts and melon seeds. Keep aside.
In a pan, heat oil. Add cardamoms, cloves, cinnamon and bay leaf. And onion paste and sauté for a while. Add ginger garlic paste, salt and white pepper powder. Add cashew paste. Adjust water accordingly. Add cream and serve hot.

This gravy can be used to make Shahi paneer, Malai Kofta, etc.
