Vada pav is a very popular street food. A spicy potato mixture dipped in a besan batter and fried till crisp is then sandwiched between 2 layers of bread( pav) that is slathered with spicy green chutney and tomato ketchup.
This mini version of vada pav has everything from its traditional older sibling with a few changes. The pav here is baked in the shape of baskets. I used the muffin tray here. It’s beautiful how these bread baskets turned out.
This snack is something to fall in love with just by it looks. This makes for a perfect appetizer for a party. So grab your guests attention with this super cute mini vada pavs.
12 slices of bread
2 potatoes ( boiled and mashed)
1/2 tsp mustard seeds
1 tsp red chili powder
1/2 tsp turmeric powder
1/2 tsp coriander powder.
Salt to taste
For the besan batter:
4tbsp besan ( chickpea flour)
1/2 tsp red chili powder
Pinch of salt
For the green chutney:
1 cup coriander leaves
1 cup mint leaves
1 green chili
2 cloves garlic
1 inch piece ginger
1 tsp cumin seeds
1 tbsp lemon juice
Cut rounds from the center of the bread slices. Roll it a bit with a roller or press with your palm. Set it in the muffin tray. Bake for 10 minutes or till the baskets are brown and crisp.
Heat oil in a pan. Add mustard seeds. When they splutter, add mashed potatoes, red chili powder, turmeric powder and coriander powder. Mix well and keep aside.
Mix 4 tbsp of besan ( chickpea flour), red chili powder and salt with little bit of water to make a smooth batter. Make small balls of the potato mixture. Dip in this batter and deep fry till golden brown.
Prepare green chutney by grinding a bunch of mint leaves, coriander leaves, 1 green chili, 2 cloves garlic, a small piece of ginger, 1 tsp cumin seeds and 1 tbsp lemon juice.
Assembling the mini vada pavs
Place the baskets on the plate. Place a blob of ketchup on it. Keep the fried potato ball on it. Drop a generous amount of green chutney on it. Sprinkle sec and chaat masala. Decorate with peanut.
