Chicken Paneer Pizza

Pizza is my perfect comfort food. I can have it any time of the day, breakfast, lunch and dinner and maybe even for the in between snacks. Well, who doesn’t love pizza. I have hardly come across people who say a no to pizza. And if they do I am like ” Are you crazy? ” I tell myself that they might be from a different planet to have a distaste for pizza. After all, that melting of cheese in the mouth is enough to fall in love with it.

I lately have been obsessed with making the pizza dough at home. Earlier I bought the ready made pizza base and prepared the pizza. But now it’s been quite some time since I started experimenting on making my own pizza base. This recipe makes the perfect pizza crust than all the ones that I tried. I used a mix of whole wheat flour and all purpose flour. It turned out really well. I made a topping of chicken and paneer, both a favorite at my place. I gave a tandoori flavor to both. It was a little spicy but everyone loves spicy food at my place. So if you aren’t into spicy foods, reduce the amount of this masala.

Recipe:

For the dough:

2 cups all purpose flour
2 cups whole wheat flour
21/4 tsp yeast
1/3 cup olive oil
11/2 tsp salt
1 tsp sugar
2 cups warm water

For the topping:
For chicken :

500g boneless chicken ( cut into bite sized pieces)
1 tbsp ginger garlic paste
1 tsp red chili powder
1 tsp tandoori masala
1/2 tsp coriander powder
1 cup yoghurt
Salt to taste

For paneer:

200g paneer
1 big onion ( chopped into big pieces)
1 capsicum ( chopped into big pieces)
1 cup yoghurt
1 tbsp ginger garlic. Paste
1 tsp tandoori masala
Salt to taste

To spread:
Kraft cheese
Grated mozzarella cheese
Pizza sauce

Method:

Dough:
Dissolve yeast and sugar in 1 1/2 cups of warm water. Let yeast activate for about 5 minutes. In a bowl, mix the flours, salt and olive oil. Add the yeast and water and mix to form a dough. Place in an oiled bowl and cover with plastic. Allow to rise for 2 hours.

Topping:

Marinate chicken with ginger garlic paste, yoghurt and all the mentioned spices. Keep aside for at least 2 hours. Bake in oven.

Marinate paneer, big chopped onion, capsicum and corn with – yoghurt, tandoori masala, salt and gg paste.
Roll out a ball of dough. Prick with a fork. Spread kraft cheese. Spread pizza sauce. Spread paneer mixture. Spread cooked chicken and mozerella cheese. Bake in a preheated oven till the top cheese melts and the base is cooked.
